Corn and Potato Patty

This is a great dish to serve during tea time. Enjoy! :)

Oil for shallow frying
500 grams potatoes (peeled)
1 can of corn kernel (throw out the water)
2 eggs (beaten- placed in a seperate bowl)
Breadcrumbs as required (placed in a seperate bowl)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder


1. Cut the potatoes into small pieces. Boil the potatoes.
2. Mash the potatoes until smotth.
3. Add salt , peppper and chili poweder into the mashed potatoes.
4. Then add the corn kernels.
5. Mix well together, then use your hands to form into patties.
6. Dip each patty in the egg mixture and then in the breadcrumbs.
7.  Heat oil in a frying pan.
8. Shallow fry them on medium heat until golden brown on each side.
9. You can serve the corn and potato cake with your favorite dip. I served mine with sweet chili sauce and it tasted great.
